This extraordinary citrus fruit is beloved by chefs the world over. You may have come across its delicate aroma in Earl Grey Tea, but the real thing is a juicy beautiful green (at it's peak) orb of sour loveliness. We take the freshest, greenest, tightest fruit, and zest them, by hand. Next we extract every drop of juice from each individual fruit and drench the salt in it. We leave it to infuse and gently dry, often for days as we gently waft warm air over the mixture until they take on the flavours and aromas of this unique fruit. We use this salt all the time, particularly good sprinkled on chicken or fish, it can also be used to rim cocktail glasses, add a bit of interest to your tomato juice or add to curries, soups and sauces for a little additional tang. Great also used as a rub with the chilli salts and herb salt.
